I let some store-bought kombucha sit out (covered) and it developed a SCOBY(symbiotic culture of bacteria and yeast) after about a week. I followed this recipe https://www.kombuchakamp.com/kombucha-recipe and made a batch of black rose tea.
The challenge for me was I didn’t have any filtered water, so I boiled a gallon of tap water to neutralize the chlorine. It was a hot day and the water took a while to cool down (an hour or so), but I was able to get the tea mixed and my SCOBY into the new mixture. I added a little extra sugar for extra food. I cut up an old but clean shirt for the top filter — I read that paper towel debris inteferes with development.
