Harvesting and Pickling

Today’s (quite modest) haul:

  • Eggplant: 11 oz
  • Peppers: 4 oz
  • Tomatoes: Just a bit over 2 pounds

I used a quick pickle recipe to preserve and flavor some of my tomatoes. For fun I also quick-pickled some cabbage.By quick-pickle I mean a mix of vinegar, water, sugar, and spices.

The recipe didn’t call for any garlic, but I just know it needs it.
